Cascara, which means “skin,” “husk” or “shell” in Spanish, is the fruity outer skin and pulp of a coffee cherry. The pulped skin is collected after the seeds—known as coffee beans—are removed, then dried in the sun. The resulting product has a flavor profile that balances sweet and tart, and has less caffeine than coffee.

Just like with coffee, Cascara’s flavor profile can depend on where it’s grown.Notes of hibiscus, papaya and green apple are all possible.
